Yeah different cams adjust the time, and amount that the valve opens, allowing for changes in the amount of the air/fuel mixture in the cylinder head.
Awesome stuff, most cams will give that rat-a-tat sound you hear there.

wikipedia - camshaft. it opens up the valves so the air/fuel mixture can get in and exhaust can go out of the cylinder.
